Mastering the fine art
In most cases, the production process of a spirit begins with maceration or fermentation – the extraction of alcohol through fermentation. This process takes place in stainless steel tanks and is closely monitored.
During the subsequent distillation on ultra-modern Black Forest copper stills, we attach particular importance to the precise separation of the middle run, also known as the heart, which guarantees the unique quality of our distillates.
We refine selected brandies by storing them in new barrels made of different woods or in wooden barrels previously filled with sherry, cognac or bourbon, so that the distillates have enough time to develop their beautiful aroma and internalize the character of the barrels.
This is how they mature in the BIMMERLE PRIVATE DISTILLERY to become a unique pleasure. The distillates develop fine caramel and vanilla notes as well as light roasted aromas.

Finally, dedicated and qualified employees at BIMMERLE PRIVATE DISTILLERY ensure that the wide variety of spirits are filled into a wide range of bottle shapes.
Sophisticated filling systems and modern labeling and packaging technology guarantee a smooth process.
With our in-house logistics service, we design the final appearance for our customers. This is of crucial importance to us. For this reason, we have our own fleet of vehicles and offer various logistics and shipping solutions.

Regional heating
We use biomass – a renewable raw material from the Black Forest – for all our energy requirements. We also use stone fruit kernels, which are also converted into thermal energy thanks to clever technology.
Heat recovery
The distillation process produces organic residues, which are passed on to biogas plants, which in turn generate energy.
Save water
Thanks to temperature-controlled fermentation, we meet the highest quality standards. Thanks to an intelligent cooling circuit, we can save between 500 and 1,000m3 of water every day.
